This is a strong weeknight move: one tray, a quick glaze and fresh dill at the end. The citrus keeps the salmon lively without covering up its flavour.
Ingredients
- 4 salmon fillets, about 5 oz each
- 1/3 cup orange juice
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp SweetMonkFruit
- 1 garlic clove, grated
- 1 tbsp chopped fresh dill

Method
- Heat oven to 400°F (200°C) and place the salmon on a lined baking sheet.
- Whisk orange juice, lemon juice, Dijon, SweetMonkFruit and garlic, then brush over the fillets.
- Bake for 10-14 minutes, depending on thickness, and finish with fresh dill.
